The best high protein pancake recipe June 30, 2013 weight management 3 Comments The best high protein pancake recipe Travelling Dietitians high protein high fibre breakfast recipe Big call I know claiming ‘the best’ for any recipe, but as I see it, this all natural high protein and high fibre power house of a recipe really does tick the taste, nutritional, and quick to prepare criteria that I so often speak about on my facebook profile. As usual, feel free to modify and mix up the additions and flavour combinations, just be aware that the calories may go up, or the nutritional profile in general will change. This recipe is super nutritious because it: Is high in fibre (at least 10.4g / 40% RDI women) Is high in protein (around 23g) Is low GI with slow release carbohydrates, and It contains no added sugar If that isn’t enough to say we are onto a winner already…just wait till you try it! High protein, high fibre, no added sugar, chocolate, coconut, pancake! Choc-coconut high protein and high fibre ‘pancake’ What you will need: 1 Goodness Superfoods BARLEYmax wrap 2 egg whites 100g reduced fat cottage or ricotta cheese 2 dashes coconut essence (could switch for vanilla essence if you prefer) 2 tsp natvia (or natural sweetener of choice) 1 tsp crio bru cocoa powder Optional – cinnamon Ingredients: Natvia, Eggs, Crio Bru, Coconut essence, Goodness Superfoods BARLEYmax wrap, cottage Mix egg whites, 1 tsp natvia, 1 dash coconut essence (and cinnamon if you wish) in a bowl. Mix in a small ramekin reduced fat cottage/ricotta cheese, 1 tsp natvia, crio bru cocoa, and 1 dash coconut essence; place aside. Dip Goodness Superfoods BARLEYmax wrap in the egg mixture. Heat non stick fry pan (can cover with a tiny bit of olive oil if preferred). Place wrap with remaining egg mixture onto pan, cook on one side approximately 1-2 minutes (egg mixture will go over and cover the sides of the wrap), flip, cook another 30 seconds- 1 minute. Serve on plate, topped with choc-coconut cottage cheese mixture. Enjoy! Total time – about 7 minutes. Nutrition: Protein- 23g Fibre- 10.4g Calories- Approximately 250 / 1,100kJ Some modifications that could be made and would taste pretty good too would be to use an all natural Greek yoghurt (i.e plain chobani) in place of the cheese, or sprinkle coconut flakes and flaked roasted almonds into the cottage cheese mix.
